Do you love desserts? Oh good! Today I’m sharing with you The Best Strawberry Mascarpone Topped Mint Cookie Dessert recipe!
This strawberry mascarpone-topped mint cookie dessert is sure to delight your taste buds! Bursting with sweet and refreshing flavors, it’s the perfect end to a delicious family meal. The unique combination of ripe strawberries, sweet mascarpone cheese, and a hint of mint in each crunchy cookie provides the perfect balance for an unforgettable treat. Bring something special to your next gathering or indulge in it for yourself- either way, you’ll want seconds!
For years my husband would bring chocolate-covered strawberries to his mom, my mom, and to me for Valentine’s Day. We all just love this tradition.
When I first tried this easy and quick alternative to mixing my two favorites together, I thought I had a winner! Make no mistake about it though, I still plan on eating the chocolate-covered strawberries my sweet husband will surely be delivered. A girl can always have two desserts!

What You’ll Need to Make Your Mint Cookie Dessert
I’ve added my own spin by including mint chocolate-covered wafer cookies, rather than using the mint sprig. While I love the idea of fresh mint, although, I didn’t have any available at the time and couldn’t wait for the next market visit to make these delicious morsels for our dessert.
Here’s what you will need.
- 1 cup Strawberries
- 1/2 tsp Sugar
- 1/2 tsp Fresh Squeezed Lemon Juice
- 1/4 cup Mascarpone
- 12 Chocolate-Covered Wafer Cookies
- 1 TBPS Fresh Mint
Toss together strawberries, sugar and lemon juice in a small bowl
Spread 1 tsp mascarpone onto each cookie, top evenly with strawberry mixture.
Sprinkle cookies evenly with mint.
