  • Up next, combine your dry ingredients in a large mixing bowl until you’ve got a cup of batter that dreams are made of – keep it simple with the basics: Einkorn flour,(Einkorn flour is a low-gluten ancient grain that is wonderful for those with gluten sensitivities: I would not recommend for celiac disease however)  coconut sugar, baking powder, and Himalayan salt, and mix well. 
  • Pour the wet ingredients into the dry ingredients and stir until combined and no lumps remain.
  • Now, for the star of the show: coconut milk! This dairy-free champion will give your waffle batter a delightful texture and golden brown finish. Mix it up until you achieve that perfect, smooth consistency.

I do not use cooking spray on my Cuisinart Belgian waffle maker but feel free to add it. We want those waffles to slide right out with ease. Pour the batter onto the hot iron and let it work its magic.

  • 1 1/2 cup Coconut Milk
  • 2 Large Eggs
  • 6 tbsp Coconut Oil
  • 1 tbsp Vanilla
  • 2 cups Einkorn Flour
  • 4 tsps Coconut Sugar
  • 1 tbsp Baking Powder
  • 1/4 tsp Pink Himalayan Salt


  • Heat the waffle iron. Lightly spray with cooking spray if needed.
  • Whisk eggs, coconut milk, coconut oil and vanilla together in large mixing bowl. Set aside.
  • Combing Einkorn flour, coconut sugar, baking powder and himalayan salt in seperate bowl and mix well.
  • Next, pour the wet ingredieints into the dry ingredients until well combined.
  • Pour waffle batter to the waffle iron and cook.
  • Serve waffles hot and fresh with berries and maple syrup.
