Grazing is my thing. A little of this, a little of that — a bite here, a nibble there. There is something about a beautiful little platter that just makes an ordinary evening feel special. Andrew and I do this often — I pull together a small board just for the two of us, and we sit and enjoy it together. It is one of my favorite simple pleasures.

The other night I put together these Smoked Salmon Cucumber Bites, and I have to tell you — the moment I tasted one, I immediately thought — my friends and family have to have this. It is too good not to share. Light, fresh, beautiful on a platter, and honestly so easy that I almost felt guilty calling it a recipe. Almost.

And I am already planning — the pickleball guys are coming over after Wednesday night pickleball, and this is going straight onto the grazing board. Something tells me they will not last long.

The Cucumber

English cucumbers are my first choice for this recipe — they have fewer seeds, a thinner skin, and a consistently crisp fresh cucumber bite from end to end. Persian cucumbers are a wonderful alternative if that is what you have — they are slightly smaller which makes adorable little two bite rounds. Either way look for firm cucumbers with no soft spots.

The Salmon

Look for cold-smoked salmon when you can find it — the silky texture and delicate smoky flavor is perfect here. Nova lox is another beautiful option with a slightly milder flavor. Pre-sliced works perfectly and makes assembly effortless. Wild caught is worth seeking out when available — the color is a gorgeous deep coral, and the flavor is noticeably better.

Goat Cheese Option

If you are not following a dairy free plan — a small dollop of goat cheese or a cream cheese mixture blended with fresh dill and lemon zest in place of the avocado is absolutely divine. Creamy dill cream cheese on a crunchy cucumber with smoked salmon is a classic combination for very good reason. Both versions are outstanding — it just depends on what works for you.

The Bites

  • 1 large English cucumber
  • 120g cold-smoked salmon or nova lox
  • 1 ripe avocado
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh dill or fresh chives
  • Salt and black pepper

Homemade Simple Herb Salt

  • 1 tsp coarse sea salt
  • 1 tsp dried dill
  • ½ tsp garlic powder
  • ½ tsp dried onion flakes
  • ¼ tsp black pepper

How to Make Smoked Salmon Cucumber Bites

Step One — Make Your Herb Salt and Avocado Base

Mix together your coarse sea salt, dried dill, garlic powder, dried onion flakes and black pepper in a small bowl. Set aside. In a separate small bowl mash your ripe avocado with fresh lemon juice, lemon zest and a pinch of salt until smooth but still a little textured. This creamy avocado base is what makes everything hold together so beautifully on each round.

Step Two — Slice and Prep the Cucumber

Using a sharp knife slice your English cucumber into rounds about ½ inch thick on a cutting board. Pat each cucumber slice dry with paper towels — this keeps everything crisp and prevents the rounds from sliding around on your platter. Lay them out in a single layer ready to top.

Step Three — Assemble and Serve

Spoon a small dollop of your avocado mash onto each fresh cucumber round. Top with a piece of salmon torn into a beautiful little fold. The homemade herb salt can be made days ahead and stored in a small jar — I keep a batch in my pantry at all times now. The avocado mash can be made an hour ahead — press plastic wrap directly onto the surface to prevent browning. Slice and pat the cucumbers dry up to an hour before serving. Assemble right before your guests arrive for the freshest, crispest result.

How to Style Your Grazing Board

Arrange the salmon cucumber bites in a slightly overlapping line or a gentle curve on your board — odd numbers always look more natural and beautiful than even. Tuck fresh dill sprigs and lemon slices alongside for color. A few extra capers scattered around add a lovely briny touch and look gorgeous.
