Easy Homemade Gluten-free Crispbread: Best Cracker Recipe

Equipment

  • Pizza cutter or butter knife

Ingredients
  

Dry Ingredients

  • 2 cups Almond flour
  • 1/2 cup Sunflower seeds
  • 1/4 cup Flaxseeds
  • 1/2 tsp Pink Himalyan salt
  • 2-3 tbsp Fresh Rosemary and Thyme
  • 1/2 cup Optional: Pumpkin seeds, Chia seeds or Sesame seeds

Wet Ingredients

  • 2 large Eggs
  • 2 tbsp Olive Oil

Instructions
 

  • Preheat your oven temperature to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine flour mix: 2 cups of almond flour, 1/4 cup of flaxseeds, 1/2 cup of sunflower seeds, 1/2 to 1 tsp pink Himalayan sea salt, and two to three tablespoons of fresh rosemary or thyme.
  • Add in 2 beaten eggs and 2 tbsp olive oil, mix until a dough forms.
  • Roll dough into a ball.
  • Place the dough between the sheet of parchment paper on the baking dish and a second sheet of parchment paper on top, then roll it out thinly with a rolling pin.
  • If desired, sprinkle pumpkin seeds and chia seeds on top of the dough and gently press them in with the rolling pin.
  • Use a pizza cutter to slice the dough into desired cracker shapes. The crackers do not have to be a perfect shape.
  • Remove the top layer of parchment paper and brush the cracker dough lightly with olive oil.
  • Place baking sheet in the preheated oven for 12-15 minutes, or until the edges are golden brown and crispy.
  • TIP: once slightly cooled break the crackers apart.
    Allow the crispy crackers to cool completely on the baking tray before serving.
  • Enjoy your homemade gluten-free crispbread with your favorite toppings or hummus dips!
    Store in an airtight container.
