Ingredients
  

  • 8 oz Flour (1 3/4 cups)
  • 1 tsp Cinnamon
  • 1/2 tsp Baking Soda
  • 1 Egg (beaten)
  • 2 1/2 oz Orange Marmalade
  • 2/3 cup Whole Milk
  • 5 tbsp Vegetable Oil
  • 4 oz Apple (1 small)
  • 4 oz Fresh or Frozen Cranberries
  • 1 tbsp Rolled Oats
  • 1/3 cup Chopped Walnuts

Instructions
 

  • In deep muffn pan, place 10 large miffin liners
  • In mixing bowl, add flour, cinnamon, baking soda
  • Make a well in the center of the flour mixture.
  • In a seperate bowl, blend the egg with the marmalade until well mixed.
  • Beat the milk, oil into the egg mixture, then pour the dry ingredients, stirring lightly
  • Do not overmix. The batter should be lumpy.
  • Quickly stir in the apple and cranberries, walnut.
  • Spoon batter evenly into the muffin liners and sprinkle oats over each muffin.
  • Bake in preheated oven 400 degrees for 20 - 25 minutes or until golden brown, and skewer inserted into center comes out clean.
  • Lift out the muffins and transsfer onto a wire rack. Let sstand for 5 to 10 minutes, or until cooled. Peel off muffin liners and serve warm with a glass of freshly squeezed orange juice or a Mimosa! Enjoy
