Ingredients
  

  • 4 tbsp Butter
  • 3 Large White Onions
  • 1 tsp Sugar
  • 2 tbsp Flour
  • 32 oz Beef Broth
  • 1/4 cup Red Wine or Sherry
  • 6 Slices of French bread, sliced diagonally
  • 1/4 lb Gruyere Cheese

Instructions
 

  • Melt the butter in a large, deep pot over medium heat
  • Add onions, cover, cook for 15 minutes, stir occasionally, untel soft and golden
  • Uncover, increase heat to medium high
  • Stir in sugar
  • Cook uncovered for 6 to 7 minutes, stirring often
  • Sprinkle in flour
  • Stir in broth, wine and 1 cup of water
  • Simmer for 5 minutes
  • Heat broiler, spread bread slices on a baking sheet, toast for 1 to 2 minutes
  • Place 6 ovenproof bowls or crocks on a baking sheet, divide soup evenly
  • Use a vegetable peeler to thinly slice pieces of cheese.
  • Place a slice of toast on each serving of soup, top with cheese.
  • Heat under broiler for 3 minutes or until cheese is melted and bubbling. Serve warm
