Authentic Italian: Potatoes and Eggs Frittata Recipe

Ingredients
  

  • 8 Eggs
  • 2 medium Potatoes (any fresh potatoes are fine - red potatos, russet potatoes, or yukon gold potatoes.
  • 1 medium Yellow Onion
  • 1/2 tsp Fresh Ground Black Pepper
  • 2 TBSP Extra Virgin Olive Oil
  • Italian seasoning or various spices (Oregano, Garlic salt, Garlic powder, Parsley, Kosher Salt)
  • Parmesan Cheese (optional)

Instructions
 

  • In large bowl dice potatoes and set aside.
  • Evenly chop the onions.
  • Cover the bottom of the pan with extra virgin olive oil. 
  • Over medium heat, in a cast iron or nonstick skillet, saute the onions and potatoes for 4-5 minutes until golden brown.
  • Add garlic powder, garlic salt, oregano, and parsley to the potato mixture.
  • Beat the eggs and add a pinch of salt.
  • Add the beaten eggs to the frying pan.
  • Cook the egg mixture, potatoes, and onion for an additional 3-4 minutes on medium-high heat.
  • Using a spatula, gently scrape the sides of the pan.
  • Once the eggs are almost set and the top is runny, place in the oven on broil for 3-4 minutes. Serve immediately.
